2 Cuisses de Confit de Canard.
Idôlatrés par les Pharaons, vedettes des banquets chez les Grecs et les Romains, le canard et l'oie sont très tôt apprivoisés par l'homme et engraissés. A l'origine le confit était une méthode de conservation de la viande compte tenu des moyens disponibles à l'époque. Après une macération de 24 heures dans le sel, les cuisses de canard sont plongées dans une marmite contenant de la graisse fondue dans laquelle on les fait cuire pendant 3 ou 4 heures. On disposait ensuite les cuisses de canard dans des pots en grès et on les recouvrait complètement de graisse chaude. La viande gardait ainsi toute sa tendreté et sa saveur.
Faire dorer au four ou à la poêle. Peut se consommer indifféremment chaud ou froid.
